Pork Vindaloo

This is now referred to as Grandpa Dave’s Pork Vindaloo. Dave Strasen came up with this recipe back in the 1960’s using the ingredients that he could find in the states at that time.

Ingredients

  • Meat Browning
  • 6 large pork hocks

  • 6 cloves

  • ½ tsp sage

  • ½ tsp thyme leaves

  • Salt and pepper

  • ¼ cup flour

  • Meat Simmer
  • 1 bay leaf

  • 3 garlic cloves

  • 1 medium onion sliced

  • 3 cups of water

  • Vindaloo Sauce
  • 2 cups chopped onion

  • 1/4 cup ghee

  • 1/2 cup cider vinegar

  • 2 tbsp. coriander

  • 2 tbsp. toasted cumin seed

  • 4 tsp turmeric

  • 2 tsp ginger powder

  • 2 cups chicken broth

Directions

  • Rinse pork and pat dry. Dredge pork in flour and seasoning.
  • Brown Pork in a little ghee.Brown Pork
  • Add Pork to water and other ingredients and simmer on medium heat for 2 hours.
  • Make sauce, add pork, and cook on medium heat for another hour.Pork Vindaloo
  • Serve on rice that has been mixed with raisins and peanuts. (Grandpa Dave would add saffron to the rice as well)
