Lechon Paksiw! Extra saucy, rich, sour, and sweet! This dish is ideal for utilizing any leftover lechon.

Ingredients

  • 1 tbsp. vegetable oil

  • 1 med. onion

  • 6 garlic cloves

  • 4 cups leftover lechon, chopped into 1 inch pieces

  • 2 cups broth (I use a combination of beef and shrimp)

  • 1/2 cup vinegar

  • 1/2 cup lechon sauce

  • 1/4 cup soy sauce

  • 1/4 brown sugar

  • 2 bay leaves

  • 1 tsp. whole peppercorns

Directions

  • Saute onion in oil until soft then add garlic and cook until fragrant.
  • Add lechon and cook over medium heat for about 10 min stirring often.
  • Add all other ingredients and simmer for at least 30 min
  • Serve over rice

Notes

  • I make my own shrimp broth by simmering shrimp shells in water for about 10 min.
  • I use white vinegar, rice vinegar would also work
  • Add some liver sauce if you want extra richness
